Coffey is active on various committees and boards in the region, including the Blue Ridge Conservancy Land Protection and Stewardship Committee, the Voluntary Farmland Preservation Program Agricultural Advisory Board, Blue Ridge RC&D, and the Watauga County Economic Development Commission.

In his spare time, he is an avid writer and operates a website called “Blue Ridge Lore,” dedicated to sharing stories about the true tales, history, geography, folklore, and wildlife of the Blue Ridge Mountains. His stories have been published in Our State Magazine, The Appalachian Voice, the Fort Defiance Chronicle, High Country Magazine, and High Country Press.
